Almond and Pear Cake

Ingredients


  • 220 grams butter softened

  • 1-2 ripe but firm pears ,peeled, cored,and sliced lengthwise

  • 1 teaspoon baking powder

  • 1/2 cup plain flour

  • 2 large eggs

  • 1 1/4 cups ground almonds

  • 1 cup caster sugar

  • 1/3 rd cup flaked almonds




Method



Preheat oven to 160 degrees C


Use a 21 cm springform cake tin , grease the inside and line the base with baking paper

In a large bowl place softened butter and start beating with an electric mixer, gradually adding the sugar until pale and fluffy

Add the eggs one at a time and beat well

Now with mixer on a low setting gradually add the flour, baking powder and ground almonds

Place the thick batter into the springform tin and place the pears on top arranging in a fan pattern and sprinkle the flaked almonds on top




Place the tin in the oven and cook for about 45 minutes checking with a skewer inserted into the centre iff it comes out clean, iff not keep cooking till it is cooked through, once done place on a cake rack and cool .
