Apple Sponge Pudding

Ingredients


  • 50 grams butter at room temperature

  • 1/4 cup caster sugar and 2 teaspoons extra sugar

  • 1x800 grams tinned apples for a pie filling

  • 1 cup self raising flour

  • 1/4 teaspoon vanilla essence

  • 2 eggs [lightly beaten]

  • 1/2 cup milk

  • 1/4 teaspoon ground cloves

  • icing sugar to dust

  • custard and or cream to serve

Method



Preheat oven to 180 degrees C


Use a 21 cm cake tin , grease the inside

Add the 2 teaspoons of sugar and the cloves to the apple and stir through

Place the apples in the base of the tin

In a bowl, place the softened butter and gradually beat in the sugar till smooth and creamy

Add the eggs and vanilla essence and beat well

Add half the flour and mix in till smooth

Add the milk and mix well

Add the remaining flour, mix thoroughly

Pour over the apples and place in the oven

Will take approx 30 mins to bake , when top is golden and skewer comes out clean it is cooked

Remove from the oven and set aside

Serve with custard and or cream
