Asian Style Salmon Soup

Ingredients
3/4 cup rice
500 grams salmon fillets skinned and diced
4 cups chicken stock
2 cups water
3 tablespoons soy sauce
1 1/2 tablespoons sesame oil
2 cups chopped coriander stems and leaves
1-2 teaspoons salt to taste
4 spring onions finely sliced
200 grams mushrooms finely sliced
1 tablespoon minced garlic
1 tablespoon minced ginger
1/4 of a small cabbage finely sliced
Method
In a large pot add the stock and water and bring to the boil, add the rice and simmer for 10 minutes, add the rest of the ingredients except the fish,and simmer for another 20 minutes till rice is soft and vegetables are cooked
Add the fish and simmer another 5 min, check the flavour and add soy sauce or more salt to taste and serve
