Asian winter melon with eggs

Ingredients

2 cups chopped winter melon

2 eggs whisked

2 tablespoons minced ginger

2 tablespoons minced garlic

2 spring onions finely sliced

1/4 cup soy sauce

2 tablespoons oil




Method

In a frypan add the oil and fry the ginger and garlic, add the melon and fry till soft

Add the eggs till cooked and top with spring onions and soy sauce and stir through

Enjoy!
