Beetroot and Fetta Cheese Salad

Ingredients

  • 2 large beetroots peeled , cooked and cut into chunks

  • 1 small red onion finely sliced

  • 1/2 cup cubed fetta cheese

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 2 tablespoons white wine vinegar

  • 2 tablespoons olive oil

  • 1 tablespoon drained capers




Method

Mix all ingredients together, cover and refrigerate till ready to serve
