Beetroot and garlic salad

Ingredients
1 large peeled and coarsely chopped beetroot
2 minced garlic cloves
2 tablespoons olive oil
1 tablespoon white vinegar
1/2 teaspoon salt
Method
Boil beetroot , this will take quite a while, once soft, drain and dice
In a bowl mix all the ingredients and adjust salt to taste
