Canellini beans with roasted red pepper salad

Ingredients


3 tablespoons olive oil

1 tablespoon minced garlic

2x400g tins of canellini beans[drained and rinsed]

1/4 cup chopped fresh parsley

juice of 1 lemon

grated lemon rind of 1/2 a lemon

400 g jar of roasted red capsicums [drained and chopped into small pieces]

salt to taste



Method


Place 2 tablespoons oil in saucepan and add garlic , heat for 30 seconds then add peppers , heat through for 1 minute add the beans, warm it through

Place in a bowl , stir through the parsley and lemon juice and rind and the remaining oil and add salt to taste
