Cantaloupe and Prosciutto Salad

Ingredients

  • 1/4 Canteloupe thinly sliced

  • 2 medium tomatoes sliced thinly

  • 1/2 cucumber thinly sliced

  • 4 slices of thinly sliced prosciutto chopped into small pieces

  • 50 grams goats cheese, crumbled

  • 4 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 1/2 teaspoon sugar

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 cup chopped basil leaves[optional]



Method


In a large, flat , dish place a layer of the cantaloupe, then tomato slices over it, then cucumber slices, then prosciutto , then the goats cheese, then basil leaves [ iff using], mix the remaining ingredients and pour over the salad , ready to serve
