Cauliflower Curry

Ingredients
1/4 cup olive oil [extra oil may be needed]
1 cup chopped fresh coriander
1 large brown onions chopped finely
2 heaped tablespoons minced garlic
2 tablespoons ginger paste
10 curry leaves
2 tablespoons red curry paste
1 teaspoon turmeric
1 tablespoon cumin powder
1 tablespoon coriander powder
1x400 g tinned chopped tomatoes
1x400 g coconut cream
1 teaspoon salt to taste
1 head cauliflower washed and chopped into small pieces
Method
In a large frying pan add the oil and onions and fry gently , till soft about 5 minutes, add the garlic , curry leaves, ginger, cumin powder, coriander powder, turmeric powder and fry for another minute
Add the coconut cream , salt, and cauliflower, stir through and fry for a couple of minutes
Add the tinned tomato , stir through and cook gently for 5 minutes
Add the fresh coriander and salt to taste, cook till cauliflower is soft add a bit of water iff needed
Serve with rice and /or paratha Enjoy!
