Chicken Goulash

Ingredients


3 tablespoons olive oil

1 tablespoon minced garlic

1large brown onion, diced

600 grams chicken thighs chopped into bite size pieces

1 x 400 g tomato pieces

1 diced red capsicum

1 diced green capsicum

1 tablespoon paprika

1 tablespoon caraway seeds

salt and pepper to taste

1/2 cup cold water

To serve with


Mashed potatoes/ pasta/rice

sour cream

2 tablespoons chopped fresh parsley



Method

Place oil in a large saucepan and cook the onion and capsicums till softened then add the chicken and garlic and fry till lightly browned

Add the paprika, caraway seeds , tomato , water and salt and pepper

Bring to the boil and then simmer gently for about 30-40 mins till chicken is cooked

Ready to serve
