Chicken Noodle Soup

Ingredients


1/4 cup oil

1 large brown onion peeled and diced

1 large zucchini diced

3 medium carrots peeled and diced

4 celery stalks trimmed and sliced

2 teaspoons minced garlic

4 heaped teaspoons of powdered chicken stock

2-3 teaspoons salt

pepper to taste

1kg chicken drumsticks

10 cups water

1 cup pasta












Method

Place drumsticks and 10 cups water in a large saucepan , bring to boil and simmer for 1.5 hrs


Once cooked set aside to cool

When cooled debone the meat and chop finely and place in the strained stock, should have about 10 cups of stock , iff not, add water to it, and set aside


In a frypan place oil and onions and fry for about 2 minutes then add the celery, carrots and garlic continue frying for another 5 minutes then add the zucchini and fry another 2 minutes


Add all these ingedients into the saucepan with the stock and chicken, bring to the boil and simmer for about 20 minutes till vegetables are soft then add the stock and salt and pepper and the pasta, reduce heat and simmer for another 10 minutes till pasta is cooked check taste and add salt and pepper as desired
