Creamy chicken with mushrooms and port

Ingredients
1/2 cup olive oil
4 spring onions finely sliced
1 teaspoon minced garlic
600 grams boneless and skinless chicken thigh fillets
1/2 cup port
1 cup light cream
600 grams sliced mushrooms
1/2 teaspoon salt, adjust according to taste
freshly ground black pepper
1 cup plain flour seasoned with salt and pepper to coat the chicken pieces
Method
Wash the chicken pieces and trim off any fat
Coat them in the seasoned flour
Heat the oil in a deep large frypan
Add the chicken pieces and slowly fry till browned evenly on both sides , then set aside
Add the onion and garlic to the frypan and gently fry for about one minute
Add the washed mushrooms and fry till the moisture reduces and they start to brown slightly , this will take about 10 minutes
Add the cream and port , stirring it in well
Add the chicken pieces and bring the sauce to a boil, then reduce the heat so the sauce simmers and cover with a lid , let it cook for about 15-20 minutes till chicken cooked through and add salt and pepper , taste and adjust accordingly
Ready to serve , very nice with mashed potatoes
