Chilli Con Carne

Ingredients

  • 1/3rd cup olive oil

  • 2 brown onions chopped

  • 3 teaspoons minced garlic

  • 1KG lean minced beef

  • 1 glass red wine

  • 1 glass water

  • 800G cans red kidney, beans drained and rinsed

  • 1 Red pepper chopped

  • 1 tablespoon tomato paste

  • 2 green chillies thinly sliced

  • 2 teaspoons ground cumin

  • 2 teaspoons ground coriander

  • 1 stick of cinnamon

  • 2 teaspoons paprika

  • 1 bunch coriander leaves chopped

  • 1 teaspoon salt (adjust to taste)

  • Freshly ground pepper

  • 1 teaspoon cayenne pepper Optional: Sour cream or yoghurt to serve to rice



Method


Fry the onion in oil till soft, then add the red pepper & garlic.


Fry until soft, then add the green chillies. Stir for 20 minutes or until soft.


Add the minced beef, making sure you break it up whilst frying.


Cook until the water evaporates from the minced beef & it starts to brown.


Then add the wine & let it evaporate.


Add the cumin, coriander, paprika & fry it up for about 2 minutes.


Then add the tomatoes, tomato paste, cinnamon stick, water, salt and pepper - stir well.

Bring to a boil then reduce heat & let it simmer for about 50 minutes.


Add drained & rinsed beans and chopped coriander.


Cook for another 20 minutes.


If you want it spicier, add 1 teaspoon of cayenne pepper.


Serve with rice and a dollop of yogurt or sour cream.
