Chinese Winter Melon Soup

Ingredients for meat balls


1 egg whisked

500 grams pork mince

1 tablespoon minced garlic

1 tablespoon minced ginger

1 spring onion, finely diced

1 tablespoon light soy sauce

1 teaspoon sesame oil

1 tablespoon chinese cooking wine

1/2 teaspoon sugar

1/2 teaspoon salt

1/2 teaspoon pepper



Ingredients for the soup broth


4 cups chicken broth

2 cups cold water

2 spring onions finely sliced

2 tablespoons olive oil

1 teaspoon sesame oil

3 cups peeled and chopped winter melon

50 grams rice vermicelli noodles , soaked in cold water for 15 minutes , then drained

salt to taste

1 teaspoon pepper

1 cup chopped enoki mushrooms

1/2 bunch coriander washed and chopped


Method


Place all meat ball ingredients in a bowl and mix well , roll into small meat balls place on a tray put in the fridge

Place oil in a large saucepan and fry the spring onions in this, then add the remaining soup ingredients and bring to the boil, gently add the meat balls , simmer for 15 minutes till meat balls are cooked, taste for salt and ready to serve
