Chocolate cake with ganache

Ingredients for the cake


  • 2 cups caster sugar

  • 2 cups plain flour

  • 1 cup cocoa powder

  • 2 teaspoons baking powder


  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • 3 eggs

  • 1 cup milk

  • 1/2 cup vegetable oil

  • 2 teaspoons vanilla extract

  • 1 cup boiling water

  • 1 tablespoon instant coffee


Ingredients for

the ganache


600 ml thickened cream

3 packs 225 grams dark chocolate melts

crushed walnuts for decoration [optional]

gold flakes for decoration [optional]


Method

Preheat oven to 160 degrees C and grease 2 21 cm round cake tins and line with baking paper .


In a large bowl stir together the sugar, flour, cocoa, baking powder, baking soda, and salt.


Add the eggs, milk ,oil, and vanilla and mix on medium speed for 5 minutes


Dissolve the coffee in the boiling water and pour it into the cake mix, the batter will be thin , that is fine , stir through well and pour into the prepared cake tins, place in oven and bake for about 50-60 minutes , check with a skewer, when it comes out dry it is cooked , take out to cool and turn onto wire rack to cool completely


Method for Ganache


Pour cream into a bowl and pour in the chocolate melts , place in a microwave oven and set for 1 minute , remove and stir and repeat this make sure the cream does not boil, repeat the procedure till the chocolate has melted and has blended well with the cream, you may need to do this about 3 times

For the ganache to thicken , you can refrigerate it, for a short time about 10 minutes


Once cakes are cooled , trim off the tops so they are flat and pour over the ganache and assemble the cakes , you can decorate the tops with crushed walnuts and gold flakes if desired
