Coconut Prawn

Ingredients


  • 1/4 cup oil

  • 1 teaspoon cumin powder

  • 1 tablespoon coriander powder

  • 1/2 -1 teaspoon salt [to taste]

  • 1 tablespoon minced ginger

  • 2 tablespoons minced garlic

  • 1/2 teaspoon turmeric powder

  • 1 brown onion chopped finely

  • 1x400ml tomato pieces in juice

  • 1x400ml coconut cream

  • 1 red chilli , seeded and finely chopped [optional]

  • 1 tablespoon mango chutney

  • 1 red capsicum finely sliced

  • 1/2 bunch fresh coriander washed and chopped

  • 6 curry leaves [fresh or dry]

  • 1 kg shelled prawns





Method

Heat oil in a large solid frypan.


Add onion and capsicum and gently fry till soft ,[about 10 minutes] then add the garlic, chilli, curry leaves and ginger and fry for a minute

Add the turmeric, cumin, and coriander and fry for another minute


Add the coconut cream, tinned tomatoes, salt, mango chutney and fresh coriander , cook on low for about 8 minutes till slightly thickened ,add the prawns , cook through for approximately 8 minutes and serve with rice or roti
