Coconut Prawn

Ingredients
1/4 cup oil
1 teaspoon cumin powder
1 tablespoon coriander powder
1/2 -1 teaspoon salt [to taste]
1 tablespoon minced ginger
2 tablespoons minced garlic
1/2 teaspoon turmeric powder
1 brown onion chopped finely
1x400ml tomato pieces in juice
1x400ml coconut cream
1 red chilli , seeded and finely chopped [optional]
1 tablespoon mango chutney
1 red capsicum finely sliced
1/2 bunch fresh coriander washed and chopped
6 curry leaves [fresh or dry]
1 kg shelled prawns
Method
Heat oil in a large solid frypan.
Add onion and capsicum and gently fry till soft ,[about 10 minutes] then add the garlic, chilli, curry leaves and ginger and fry for a minute
Add the turmeric, cumin, and coriander and fry for another minute
Add the coconut cream, tinned tomatoes, salt, mango chutney and fresh coriander , cook on low for about 8 minutes till slightly thickened ,add the prawns , cook through for approximately 8 minutes and serve with rice or roti
