Creamy Asparagus Soup

Ingredients
1/4 cup oil
1 leek white part chopped [green part discarded]
1 brown onion, chopped
1 tablespoon minced garlic
500 grams asparagus spears chopped and washed [woody ends discarded]
7 cups water
1 and 1/2 tablespoons chicken stock powder
1/2 cup cream
1-2 teaspoons salt[to taste]
pepper to taste
Method
Place chopped leek, and onion in the oil in a large saucepan.
Fry gently till softened and then add garlic
Fry for one minute
Add the asparagus , fry for 2 minutes, stirring constantly
Now add the water and stock
Bring to the boil and simmer gently for 30 minutes till asparagus is soft
Once cooked process the soup in a blender till smooth
Now add the cream and add salt and pepper to taste
Ready to serve . Enjoy!
