Creamy Bean Soup

Ingredients







1/4 cup oil

1 medium brown onion peeled and diced

1 large leek trimmed ,washed and sliced

3 celery stalks trimmed and sliced

3 teaspoons minced garlic

4 large potatoes peeled and diced

2x420 g cans cannellini beans drained and rinsed

6 cups water

4 teaspoons powdered vegetable stock

1-2 teaspoons salt to taste

1 teaspoon pepper

  • 2 tablespoons chopped thyme

  • 2 tablespoons chopped parsley


  • 100 grams diced smoked bacon

  • 300ml cream









Method

In a deep saucepan fry onions with oil, garlic, celery, and leek till soft , about 15 minutes


Add the bacon and potatoes and fry gently for another 5 minutes


Add the stock ,beans, water and herbs mix well , bring to the boil and simmer for 30 minutes , add the salt and pepper to taste ,


Once cooked blend the mixture, with a stick blender, and pour in the cream, ready to serve.

Delicious with fresh bread
