Creamy Chicken Salad

Ingredients


  • 4 boneless and skinned chicken thighs [season with salt and pepper]

  • 2 tablespoons olive oil

  • 1/2 tablespoon oregano

  • 1 apple cored, peeled and diced

  • 2 celery sticks finely sliced

  • 1/2 cup cranberries

  • 1 handful of rocket leaves

  • 1/2 cup chopped pecan nuts

  • 1 cup mayonnaise

  • juice of 1 lime

  • 1/2 cup sour cream

  • 1 tablespoon dijon mustard

  • 1 tablespoon honey

  • salt and pepper to taste


Method

Oil a baking dish and place the seasoned chicken pieces in the dish ,sprinkle with the oregano , cook in the oven at 230 degrees Celsius for about 30 minutes till browned , remove and cool

Once cooled chop the chicken into small pieces

In a large bowl, place the apple, celery, pecan nuts , rocket , chicken pieces and cranberries, mix well

In a small bowl mix the mayonnaise, sour cream, honey, mustard and lime juice

Pour the sauce over the salad ingredients , mix well ,taste and season with salt and pepper, ready to Eat!
