Creamy Tuscan Chicken

Ingredients
3 chicken thigh fillets approx 700 grams
300 g cream
3 teaspoons minced garlic
1 tablespoon tomato paste
1/2 cup sun-dried tomatoes
1/2 cup chicken stock
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 cup white wine
salt and pepper to taste
100 g baby spinach leaves
2 teaspoons finely chopped fresh rosemary
Method
In a large frypan , place oil and fry the chicken pieces, till cooked through will take about 15 minutes
Place chicken on a dish
Now place garlic in frypan, fry for about 30 seconds
Add the tomato paste and sun-dried tomato pieces fry gently for 1 minute
Add the chicken stock, cream , balsamic vinegar, white wine and salt and pepper , stir through and bring to the boil
Add the chicken pieces and cook for another 5 minutes till cooked through and sauce starts to thicken
Remove the chicken pieces
Add the spinach and rosemary fry for 30 secs till wilted ,
Put chicken pieces back in taste for salt and pepper, warm through and ready to serve
