Creamy Tuscan Salmon

Ingredients
2 tablespoons olive oil
1 tablespoon minced garlic
2 tablespoons butter
500 grams salmon fillets ,skin on [washed and pat dry]
1/4 cup cream
1 cup halved cherry tomatoes
1/4 cup grated parmesan cheese
2 cups washed baby spinach
2 tablespoons chopped fresh basil leaves
salt and pepper to taste
Method
Place oil in a large saucepan add the salmon pieces and fry both sides ,set aside ,add the butter melt it and add garlic and fry for 30 seconds
Add the tomatoes, season them with salt and pepper and cook till slightly softened, add the cream, parmesan cheese and cook through, add the spinach and basil till it wilts and place fish back into the pan, check for salt and pepper ,warm through and serve
