Crunchy Asian Salad

Ingredients


  • 3 cups of finely shredded cabbage , red and green cabbage

  • 1 cup grated carrots

  • 1/2 cup chopped fresh coriander

  • 2 tablespoons sesame seeds [toasted on a dry frypan for about 5 mins till slightly browned]

  • 2 tablespoons roasted cashew nuts

  • 1 tablespoon minced garlic

  • 1 tablespoon minced ginger

  • 1 tablespoon maple syrup or honey

  • 1 tablespoon sesame oil

  • 1 tablspoon soy sauce

  • 1 tablespoon mirin

  • 1 tablespoon lime juice

  • 1 tablespoon oil



Method

In a large bowl place all the vegetables and coriander . Mix all the rest of ingredients in a small bowl , except the sesame seeds and cashew nuts . Pour dressing over the vegetables , mix in well. Top the salad with the sesame seeds and cashew nuts . Ready to eat !! Enjoy!!
