Crunchy Tabouleh Salad

Ingredients

  • 2 cups cooked burghul wheat

  • 1-2 teaspoons salt

  • 4 tablespoons olive oil

  • juice from one lemon

  • 1 bunch parsley washed and finely chopped

  • 1 440g can rinsed and drained lentils

  • 2 tablespoons toasted pumpkin seeds

  • 2 tablespoons toasted slivered almonds

  • 2 tablespoons toasted sunflower seeds

  • 2 tomatoes diced

  • 2 tablespoons currants

  • 1 red onion finely diced


Method

Place all ingredients in a large bowl and mix well , adjust salt to taste and serve
