Custard and Apple Cake

Ingredients
Custard
1 egg yolk
2 tablespoons caster sugar
1 cup milk
2 tablespoons cornflour
Cake Ingredients
1 1/2 tablespoons baking powder
1/3 rd cup caster sugar
2 cups plain flour
1/4 teaspoon salt
2 eggs
1/4 cup oil
2/3rds cup milk
2 large apples peeled and cored and diced into small pieces
icing sugar to dust
Method
Preheat oven to 180 degrees C
Use a rectangular loaf tin , grease the inside and line the base with baking paper
Using a small saucepan place the custard ingredients blend all ingredients well and cook on a low flame till custard thickens , cover and set aside to cool in the fridge for 30 minutes
In a large mixing bowl add the eggs and sugar and beat well,
Add the oil and milk, mix in well
Now gradually add the sifted flour , salt and baking powder, beat it all till thick and smooth , now stir through the diced apples
Place the cake batter into the prepared tin
Take the custard mixture beat it to soften it and pipe it on top of the batter
Place into the oven , cook for about 30 minutes check with a skewer till comes out dry
Set aside to cool
Remove from tin and dust with icing sugar
