Delicious Mushroom Soup

Ingredients
1/4 cup oil
1 brown onion, chopped
1 tablespoon minced garlic
800 grams washed and sliced mushrooms
1/4 cup chopped fresh thyme
7 cups water
1 and 1/2 tablespoons chicken stock powder or vegetable stock powder
1/2 cup cream
1-2 teaspoons salt[to taste]
pepper to taste
Method
Place onion in the oil in a large saucepan.
Fry gently till softened and then add garlic
Fry for one minute
Add the mushrooms, fry for 10 minutes, stirring constantly
Now add the water and stock
Bring to the boil and simmer gently for 20 minutes till mushrooms are soft
Once cooked process the soup in a blender till smooth
Now add the cream and add salt and pepper to taste
Ready to serve . Enjoy!
