Easy Indian Chicken and Potato Curry

Ingredients
3 tablespoons olive oil
2 tablespoons minced garlic
2 tablespoons minced ginger
1 large brown onion, diced
600 grams boneless and skinless chicken thighs, diced
1x400g tomato pieces
1x400g coconut milk
3 large potatoes peeled and cubed
2 red chillies finely sliced
2 tablespoons garam masala
1 teaspoon cardamon powder
1 teaspoon chilli powder[optional]
2 teaspoons paprika
1 tablespoon cumin seeds
10 curry leaves [dry or fresh]
1/2 teaspoon turmeric powder
1 tablespoon coriander powder
1 cinnamon stick
salt and pepper to taste
Method
Place oil in large saucepan, add onion and fry till softened, add ginger ,garlic and fry 30 seconds , Add the chillies and all the spices except salt and pepper and fry for 30 seconds till fragrant
Add the chicken and fry for 3 minutes , now add the tinned tomatoes and coconut milk
Bring to the boil and add the potatoes and season with salt and pepper according to your taste and simmer for 20 minutes till potatoes are soft , may need to add some more water
Once cooked can serve with steamed rice and or Roti or Naan
