Easy noodles with chicken and vegetables

Ingredients
3 tablespoons olive oil
2 tablespoons minced garlic
1 large brown onion, diced
500 grams boneless and skinless chicken thighs, diced
3 cups water
3 cups shredded vegetables [cabbage, kale, carrots]
200 grams rice vermicelli noodles
salt and pepper to taste
4 tablespoons soy sauce
2 tablespoons oyster sauce
2 teaspoons sugar
juice of 1 lemon
Method
Place diced chicken in a saucepan with the 3 cups of water and cook till chicken is cooked through , about 20 minutes , set a side to cool in the saucepan , keeping the water [stock]
Place oil in a large saucepan and cook the onion till soft and brown, add the garlic and fry for 30 seconds
Take the chicken pieces out of the stock, keeping the stock for later, place the chicken in the saucepan with the onion and garlic and fry for 5 minutes
Season with salt and pepper
Add the shredded vegetables and cook through for 3 minutes till softened
Add the reserved stock and bring to the boil, add the soy sauce, oyster sauce and sugar , stir it through and bring to the boil
Add the noodles and ensure they are immersed in the liquid , iff not enough liquid add a bit of boiling water and cook till noodles are soft
Pour lemon juice over the noodles and stir through
Taste for salt and pepper
