Fish with Carrot Sauce

Preheat oven to 200 degrees Celsius
One baking tray lined with baking paper
Ingredients
White fish fillets about 500-600 grams [ I used Rockling]
1/4 cup oil
1 teaspoon minced garlic
2 medium sized carrots, grated
1 chopped brown onion
140 grams tomato paste
1/2 cup plain flour
1 beaten egg thinned with one teaspoon cold water
1/2 teaspoon salt [or to taste]
1/4 cup white vinegar
1/2 cup cold water
1/2 teaspoon pepper
Method
Chop onions finely and fry in the oil till soft about 5-7 minutes
Add the garlic and fry for another 1 minute
Add the grated carrot and fry gently for another 5 minutes till softened
Then add the tomato paste, water and vinegar , salt and pepper and cook for another 5 minutes , then set aside
Wash the fish fillets and salt and pepper them, coat them with flour and then coat them with the beaten egg, place them on baking paper on an oven tray and put them in a hot oven 200 degrees C for about 20 minutes , once cooked , remove from the tray and place the fish fillets on a serving dish that has had half the carrot sauce placed on it , then place the rest of the carrot sauce on the top of the fish , refrigerate and serve chilled
