German Potato Salad

Ingredients


  • 1 kg potatoes washed and cut into large chunks and boiled till tender

  • 2 tablespoons olive oil

  • 1 onion chopped finely

  • 2 rashers bacon coarsely chopped

  • 1/2 cup cider vinegar

  • 1 teaspoon sugar

  • 1/2 teaspoon salt

  • 1 cup beef beef stock

  • extra salt to taste

  • 1/2 cup chopped fresh parsley




Method

Place cooked potatoes aside and keep warm

Fry bacon and onion in oil till onions soft and bacon browned

Pour in the beef stock and simmer till it has evaporated

In a small sauce pan , place vinegar sugar and salt and boil till sugar has dissolved

Pour the vinegar dressing over the potatoes

Top with the onion , bacon mixture and sprinkle the parsley over it.

Ready to serve !
