Greek Chicken Soup

Can cook in a pressure cooker 40 mins OR Slow cooker 6 hrs OR on the Stove top, 2 hrs
Ingredients
3/4 cup rice
1 kg chicken drumsticks with bone and skin
9 cups water
3 eggs separated
1 large lemon , juiced
2-3 teaspoons salt to taste
1 teaspoon pepper
Method
Chicken Stock
In a slow cooker cook drumsticks for 6 hrs on high , drain stock set aside and remove skin and bone and chop the meat and set aside.[ Iff using a pressure cooker , cook for 40 mins , or on the stovetop cook for 2 hours ]
Once have broth measure it and make it up to 8 cups by adding more water iff needed strain it and bring it to the boil again, add 3/4 cup rice and boil for 20 -30 minutes till soft, add salt and pepper to taste , set aside to cool for about 45 minutes
Whisk the egg whites till firm and frothy , slowly beat in the egg yolks , then add the lemon juice , mix in well
Take 1 cup of the stock from the soup and gently mix into the egg lemon sauce, repeat this with another cup of stock, add an extra half cup of cold water into this mixture then pour this all back into the rice mixture and add the chicken meat, taste for salt and pepper again, gently warm this ready to serve
