Greek scrambled eggs with feta and tomato

Ingredients


  • 1/4 cup oil


  • 4 lightly beaten eggs

  • 2 large tomatoes diced

  • 1 red chilli chopped finely [optional]

  • 2 tablespoons chopped mint and parsley

  • 150g feta cheese, cubed

  • 1/2 to 1 teaspoon salt [to taste]

  • pepper to taste







Method

In a frypan place the oil , tomatoes and chilli

Fry gently for about 5 minutes till vegetables are soft


Add the cheese and fry gently, till it starts to dissolve

Add the beaten eggs and top with the herbs and stir through

Once cooked through serve with buttered toast
