Green Vegetable Curry

Ingredients
2 tablespoons olive oil
800 grams mix of green beans, broccolini and spinach leaves
1 brown onion diced
2 tablespoons minced garlic
10 curry leaves
1x400 g coconut cream
2 tablespoons curry powder
1 red chilli finely sliced
1/4 teaspoon turmeric powder
salt to taste
2 tablespoons lime juice
steamed rice to serve with
Method
Place oil in a large saucepan add the onion and fry till softened then add garlic, curry leaves, chilli , curry powder and turmeric, fry gently will fragrant,
Add the vegetables and coconut cream , simmer for 5 minutes add salt to taste and lime juice , ready to serve with rice, Enjoy!!
