Indian White Fish Curry

Ingredients


1/4 cup olive oil [extra oil may be needed]

1 cup chopped fresh coriander

1 large brown onion chopped finely

2 heaped tablespoons minced garlic

2 tablespoons ginger paste

10 curry leaves

8 green cardamon pods

1 teaspoon fennel seeds

1 teaspoon cumin seeds

1 teaspoon turmeric

1 tablespoon garam masala

1 tablespoon cumin powder

1 tablespoon coriander powder

1 teaspoon chilli powder

1x400 g tinned chopped tomatoes

1x400 g coconut cream

1 teaspoon salt to taste

800 grams white fish fillets


Method

In a large frying pan add the oil and onions and fry gently , till soft about 5 minutes, add the garlic , curry leaves, ginger, cumin seeds, fennel seeds , cardamon pods and fry for another minute

Add the cumin powder, coriander powder, turmeric powder, chilli powder, garam masala, and fry for another 2 minutes

Add the coconut cream , salt, stir through and fry for a couple of minutes

Add the tinned tomato , stir through and cook gently for 5 minutes

Add the fish fillets and the coriander and salt to taste, cook about 8 minutes till the fish is flaky, taste it to check iff need more salt

Serve with rice and /or paratha Enjoy!
