Kabana Bean Casserole

Ingredients
1/4 cup oil
1 large brown onion peeled and diced
2 tablespoons minced garlic
1 fennel finely sliced
1 zucchini , chopped
1 red capsicum , chopped
1 eggplant chopped
1x400 g cannellini beans rinsed and drained
1x400 g can chopped tomatoes
1/2 cup fresh chopped parsley
375 grams Kabana sausage, sliced
1 cup white wine
2-3 teaspoons salt to taste [to taste]
1 teaspoon pepper
Method
In a deep saucepan fry onions, till soft, about 8 minutes, then add the garlic and fry for a minute
Add all the fresh vegetables and fry for about 30 minutes till all vegetables are cooked through,
Add the kabana, fry for another 2 minutes Add the beans and cook for another 1 minute
Add the tinned tomatoes and wine , cook for about 5 minutes
Add salt and pepper to taste
Delicious served with fresh bread
