Lamb Fricassee

Ingredients
1 kg cubed lamb
1/4 cup oil
1 brown onion diced
4 heads of lettuce washed and chopped
1/2 cup chopped fresh dill
3 eggs separated
1 lemon juiced
approx 6- 8 cups boiling water
1/2-1 teaspoon salt [or to taste]
1/2 teaspoon pepper
Method
Chop onion finely and fry in the oil till soft about 5 minutes
Add the the cubed lamb and fry gently till all moisture evaporates will take about 20 mins
Add 4 cups boiling water and cover and simmer gently for 1.5 hrs
Keep checking it, stirring it and adding more water till the lamb is very tender
Add the washed and chopped lettuce , dill and salt and pepper and cook for another 30 minutes set aside
Prepare the egg and lemon sauce-
Whisk the egg whites till frothy and firm, then whisk in the yolks, mix in the lemon juice
Take a cup of the juice from the casserole and gently mix it into the lemon sauce, repeat this, add 1/3 rd of a cup of cold water unto this then pour this into the lamb casserole stir it through, gently warm it and ready to serve , nice with fresh bread
