Lambs fry with creamy bacon sauce

Ingredients


1/2 cup olive oil

2 large brown onions sliced in rings

800 grams lambs fry washed and sliced ,and covered in milk overnight in refrigerator[optional]

1 tablespoon tomato paste

200g chopped bacon

1/2 cup red wine

2 tablespoons cream

salt and pepper to taste

1 tablespoon worcestershire sauce

2 cups beef stock

2 cups flour lightly seasoned with salt and pepper

1 teaspoon dried thyme


Method

Coat the lambs fry with the seasoned flour

In a large frypan add the half the oil and gently cook the lambs fry till lightly browned , will not take long

Set aside the lambs fry

Now cook the onions in the pan till soft and golden

Set onions aside

Now cook the bacon till crispy, and add oil as needed

Set aside once cooked

Add 2 tablespoons of oil in the pan and add 2 tablespoons of flour fry gently for 30 seconds

Add the beef stock and wine and stir it through

Now add the the cream, thyme , worcestershire sauce and tomato paste stir gently

It should be a creamy consistency

Now add the lambs fry , onions and bacon , season to taste , ensure all cooked through will only take about 1- 2 minutes

Delicious served with mashed potatoes and peas. Enjoy!
