Lentil Soup

Ingredients
1/4 cup olive oil
1 large brown onion chopped finely
2 teaspoons minced garlic
2 cups washed brown lentils
teaspoons dried oregano
1-2 teaspoons salt to taste
pepper to taste
7 cups water
can serve with lemon juice or vinegar to taste
Method
In a large pot add the oil and onions and fry gently , till soft , add the garlic fry for another minute
Add the water , lentils, salt , pepper and oregano , bring to the boil and simmer for about 45-60 minutes , till they are soft , iff they thicken too much add more water
To serve can add a teaspoon of lemon juice or vinegar in each plate or else leave as is, delicious served with a fresh salad and bread
