Vegan Lima Bean Soup

Can cook in a pressure cooker 1 hr OR Slow cooker 8 hrs OR on the Stove top, 2 hrs ,iff on the stove top soak the beans in cold water overnight
Ingredients
1/4 cup olive oil
2x400grams chopped tomatoes
1 large brown onion finely diced
300 grams washed baby spinach leaves
2 teaspoons minced garlic
1/2 cup chopped fresh dill
500 grams dried lima beans
8 cups water
1-2 teaspoons salt to taste
1 teaspoon sweet paprika
1/2 teaspoon ground pepper
Method
In a frypan heat 1/4 cup oil and add the onions and saute gently for about 5 minutes till soft
Add 2 teaspoons of garlic and fry gently for about 1 minute
Place all the ingredients in a pressure cooker Cook for one hour OR cook in a slow cooker for about 8 hours , OR iff cooking on the stovetop, it will take about 2 hours till beans are soft
Delicious with fresh crusty bread and a salad
