Loukoumades

(Greek Donuts)

Ingredients

  • 1 cup lukewarm water

  • 1 tablespoon active dry yeast

  • 1 1/2 cups lukewarm milk

  • 3 1/2 cups plain flour

  • 2 tablespoons white sugar

  • 1 teaspoon salt

  • 1/3 rd cup olive oil

  • Oil for frying [I used sunflower oil to deep fry]

  • Toppings of your choice






Method


In a large mixing bowl pour in the water. and add the yeast gently stirring it in. Let sit for about 15 minutes until bubbles form on the surface.


Add the milk , sugar, salt, olive oil and flour. Mix well with a mixer until it. becomes smooth doughy consistency.


Cover the bowl with a plastic wrap and place a tea towel over it and sit in a warm place (I placed over a heating vent).


Check after an hour it should have almost tripled in size, light in weight and have small air pockets. throughout.


Now you're ready to start frying.


Fill half a medium sized pan with oil.


Put on a medium-high heat till it sizzles. *To check if the oil is ready, add a pinch of dough. If it sizzles, your ready to start cooking your donuts*


Use a tablespoon to measure you're donuts. Keep placing this amount into the oil, let the donuts brown then flip them over till both sides are golden brown , ensure they do not burn.


If oil looks like it is too hot reduce the temperature ,remove the donuts once cooked and place on paper towelling so the oil is absorbed.


Keep repeating this till all the dough is used.
