Mango and Coconut Rice Pudding

Ingredients



  • 1/2 cup rice

  • 1 x400 ml can coconut cream

  • 1/4 teaspoon salt

  • 2.5cups milk [or can use coconut milk, soy milk, or almond milk]

  • 1/3 rd cup sugar

  • 1/2 teaspoon vanilla essence

  • 2 large ripe mangoes [or 2 cups chopped frozen mangoes]






Method

Place all ingredients except the mango, in a large saucepan, stir the mixture and bring to the boil and then simmer on low , constantly stirring until rice is soft , this will take about 30 mins , set aside to cool , once cool enough cover and place in the fridge


Chop the mangoes and process in a blender till smooth


Once the rice is cold , stir the mango puree through it and serve
