Mango and Coconut Rice Pudding

Ingredients
1/2 cup rice
1 x400 ml can coconut cream
1/4 teaspoon salt
2.5cups milk [or can use coconut milk, soy milk, or almond milk]
1/3 rd cup sugar
1/2 teaspoon vanilla essence
2 large ripe mangoes [or 2 cups chopped frozen mangoes]
Method
Place all ingredients except the mango, in a large saucepan, stir the mixture and bring to the boil and then simmer on low , constantly stirring until rice is soft , this will take about 30 mins , set aside to cool , once cool enough cover and place in the fridge
Chop the mangoes and process in a blender till smooth
Once the rice is cold , stir the mango puree through it and serve
