Mapo Tofu and Pork

Ingredients
1/4 cup oil
2 red chillies finely sliced
500g pork mince
1 small brown onion finely chopped
4 spring onions finely sliced
500 grams tofu cut into large cubes
1 tablespoon minced garlic
1 tablespoon minced ginger
3 tablespoons of mapo tofu sauce
2 teaspoons sesame oil
1/4 teaspoon sugar
2 teaspoons cornflour dissolved in 1/4 cup cold water
2/3 rds cup chicken stock
Method
In a frypan add the cooking oil and fry the chillies then add the brown onion and spring onions and fry till soft
Add garlic and ginger and fry for another minute
Add the pork mince and fry till cooked through about 10-15 minutes
Add the mapo sauce and the stock
Warm it through
Add all the remaining ingredients stir through till warm and ready to serve with rice
