Mexican Rice

Ingredients
1/4 cup oil
1 carrot diced
1 brown onion diced
2 teaspoons minced garlic
1 teaspoon ground cumin
1 cup white rice
1/2 cup tomato passata
2 cups chicken stock
1/2 cup peas
salt and pepper to taste
Method
In a frypan add the cooking oil and fry the brown onion and carrots till soft then add garlic and cumin
Fry gently for 30 seconds
Add the rice stirring for 2 minutes,
Add stock and tomato , bring to the boil ,cover and reduce heat and simmer for about 12 minutes
Add the peas , leave covered with heat off for about 5 minutes season with salt and pepper to taste
