Orange almond cake

Ingredients



  • 2 teaspoons baking powder [gluten free iff want]

  • 200g caster sugar

  • 225g almond meal

  • 2 large ripe oranges

  • 5 eggs

  • 3 tablespoons toasted flaked almonds[decoration]

  • 2 tablespoons icing sugar [decoration]



Method


Preheat oven to 200 degrees C


Use a round cake tin , grease the inside and line the base with baking paper


Wash the oranges and cut slits in them , put into a microwave proof dish , fill halfway with water and cook on high for 25 minutes

Once cooked and soft , drain the water, chop the oranges and remove the seeds , place in a blender, and blend till smooth

Now gradually add the rest of the ingredients Except the flaked almonds and icing sugar, blend till smooth

Now pour mixture into the cake tin and bake for about 40 minutes, cooked once a skewer inserted into the middle comes out clean, Set cake aside to cool.

Once cooled top with flaked almonds and icing sugar

Delicious served with cream. Enjoy!
