Pineapple Cake

Ingredients
60 grams butter
2 x 425 gram tins drained pineapple pieces
1 1/2 cups plain flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
4 eggs
1 teaspoon vanilla extract
1/2 cup milk
1/2 cup caster sugar
icing sugar to dust
Method
Preheat oven to 180 degrees C
Use a 21 cm cake tin , grease the inside and line the base with baking paper
Using a large fry pan , melt the butter and add the pineapple pieces and vanilla and fry till most of the moisture evaporates and they can brown a bit will take about 20 minutes on low heat, set aside to cool
Place the flour, baking powder and salt in a bowl and mix well
Using a large mixing bowl, beat the eggs well and slowly add the caster sugar , beat till light and frothy about 2 minutes
Add the milk and beat well
Add the pineapple into this mixture stirring well
Add the flour mixture gradually , stirring well , till all incorporated
Spoon into the prepared tin , place into the oven and cook for approximately 40 mins , test it with a tooth pik,insert it into the middle of the cake, iff dry, when removed, then cooked , remove from oven, place on a wire rack to cool for about 10 mins , turn cake out of the tin ,remove the paper and place on a serving plate , let it cool about 1 hour , dust with icing sugar and serve with cream if desired
