Plum and Hazelnut Cake

Preheat oven to 170 degrees C

Grease and line with baking paper a 22 cm springform





Ingredients


  • 200 grams butter softened

  • 695 grams tinned plums in juice, drained , cut in half and stones removed

  • 1 cup ground hazelnuts

  • 1 cup caster sugar

  • 4 large eggs

  • 1 cup plain flour

  • 1 teaspoon baking powder

  • 3 tablespoons apricot jam



Method



In a large bowl beat the sugar into the butter until creamy

Beat in one egg at a time , then gradually beat in the flour then the baking powder

Mix in the ground hazelnuts

Spoon the batter into the tin, then arrange the plums on top

Place in the oven and cook for about 1 hour , checking with a skewer when it comes out clean , then done

Once cooked , cool on a cake rack then heat the apricot jam till runny and pour on the top of the cake and serve
