Vegan Potato &

Pea Curry

Ingredients


  • One third cup oil

  • 1 teaspoon cumin seeds

  • 1 teaspoon mustard seeds

  • 1 teaspoon fennel seeds

  • 1 cinnamon stick

  • 1 teaspoon minced ginger

  • 1 teaspoon minced garlic

  • 1 brown onion chopped finely

  • 1 tablespoon tomato paste

  • 2 teaspoons cardamon powder

  • 3 teaspoons ground coriander

  • 1/2 teaspoon turmeric powder

  • 2 teaspoons cumin powder

  • 1/2 teaspoon chilli powder

  • 1 teaspoon garam masala

  • 1 teaspoon salt

  • 4 curry leaves [fresh or dry]

  • 1 & 1/2 cups cold water

  • 6 small potatoes washed ,cleaned and chopped into small pieces

  • 1 cup peas [fresh or frozen]

  • 1 tablespoon lemon juice




Method

Heat oil in a large solid frypan.


Add cumin seeds, mustard seeds and fennel seeds.


Fry gently for one minute ,do not burn.


Add onion and fry till soft


Add ginger and garlic and fry for approximately one minute.


Add garam masala, chilli powder, cardamon powder, cumin powder, cinnamon stick,


coriander powder, turmeric powder and curry leaves.



Fry for approximately one minute.


Add the tomato paste. Mix well.


Add the potatoes and fry well for one minute.


Add 1 a half cups of watered down salt, bring to boil.


Decrease the heat and simmer. Ensure to cover the pan with a lid.


Let cook for about 20 minute.


Add the peas and stir in well. Simmer for another 5-10 minutes, check potatoes are soft and taste to see if needs more salt.


When satisfied add the lemon juice and ready to serve. Suggestion: nice with rice.
