Potato Latkes

Ingredients
1/4 cup oil
1/2 cup plain flour
2 lightly beaten eggs
1/2 teaspoon baking powder
3 large potatoes peeled and grated
1 medium brown onion grated
1-2 teaspoons salt [to taste]
Method
Place the grated onion and potatoes in a tea towel and squeeze out the liquid
In a bowl mix the flour, eggs , salt and baking powder
Add the grated vegetables to the mix and stir through well
In a frypan place the oil , and add tablespoons full of mixture and fry gently till both sides are browned , will take about 5 minutes each side
Once all cooked serve with apple sauce and sour cream or can serve with smoked salmon, sour cream and capers , these latkes are very versatile can top with any of your favourite toppings
