Roasted Potato Salad

Ingredients


  • 1 kg potatoes washed and cut into large chunks and boiled till tender

  • 1 packet French onion soup

  • 2 tablespoons olive oil

  • 1 cup mayonnaise

  • 1/2 cup sour cream

  • 2 spring onions finely sliced

  • 1 tablespoon lemon juice

  • salt and pepper to taste




Method

Place french onion soup , oil and 1/2 cup mayonnaise in a bowl and stir well , then mix the potatoes in it , make sure they are coated well

Place coated potatoes in an oven and cook at 200 degrees Celsius for 20 mins till golden and crispy

Meanwhile mix the remaining ingredients together and once potatoes are cooked pour the dressing over them and serve
