Prawns with Feta

Ingredients
2 tablespoons olive oil
1 tablespoon minced garlic
1 large brown onion, diced
500 grams raw prawns, shelled and deveined
1 x 400 g tomato pieces
200 grams feta cheese , crumbled
salt and pepper to taste
1/2 cup white wine
To serve with
Mashed potatoes/ rice
2 tablespoons chopped fresh parsley
Method
Place oil in a large saucepan and cook the onion till soft and brown, add the garlic and fry for 30 seconds
Add the tinned tomatoes and cook till macerated about 10 minutes add the wine , simmer for 2 minutes add the rinsed prawns and heat through till change colour , season with salt and pepper add the feta cheese and warm through till melted , sprinkle the parsley on top and serve with rice or mashed potatoes and a salad Enjoy!
