Ratatouille

Ingredients
1/4 cup olive oil [extra oil may be needed]
2 large red onions chopped finely
2 red capsicums seeded and chopped
4 teaspoons minced garlic
I medium zucchini chopped in chunky pieces
1 eggplant chopped in chunky pieces
2 tablespoons chopped fresh basil
1-2 teaspoons salt to taste
pepper to taste
1 cup red wine
1x 400g tomato pieces
Method
In a large pot add the oil and onions and fry gently , till soft , add the garlic fry for another minute
Add the capsicums and fry for about 10 minutes then add the zucchini and eggplant
Add extra oil, so all vegetables are coated with the oil and fry gently constantly stirring for another 10 minutes, then add remaining ingredients , stir through
Can serve as a main with bread or steamed rice or as a side with fritters , fish or meat
